Catering Operations & Hygiene Manager

About the role

We are seeking a Catering Operations & Hygiene Manager to oversee food safety and sanitation across our catering sites. The role combines hands‑on hygiene supervision with operational leadership to ensure compliance with HACCP and local legislation.

Key responsibilities

• Develop, implement and monitor cleaning schedules and sanitation programmes for all catering facilities.
• Conduct, record and close out internal and external food safety audits, ensuring corrective and preventative actions are applied.
• Investigate hygiene incidents, perform root‑cause analysis and drive CAPA implementation.
• Enforce PPE requirements and safe work practices on the shop floor.
• Lead, coach and hold operational teams accountable while maintaining authority and credibility.
• Deliver toolbox talks, training sessions and cross‑departmental communication with Operations, Production and HSE.
• Liaise with client HSE representatives and auditors to demonstrate compliance.

Required profile

• Diploma or degree in Food Technology, Environmental Health, Hospitality Management or related field.
• Formal HACCP certification and a supervisory‑level food safety qualification (Level 3 or equivalent).
• Basic HSE/OHS qualification such as NEBOSH or SAMTRAC.
• High attention to detail, self‑driven and able to work with minimal supervision in remote site environments.
• Resilient, adaptable and culturally aware to manage a multilingual, multinational workforce.

Required skills

• Strong working knowledge of HACCP principles and food safety legislation.
• Ability to develop and manage cleaning schedules and sanitation programmes.
• Proficiency in audit processes – conducting, recording and closing out findings.
• Understanding of PPE requirements and safe work practices.
• Capability to investigate incidents and implement corrective and preventative actions (CAPA).
• Basic computer literacy for reporting, spreadsheets and compliance tracking.
