Head Chef

About the role

The Aga Khan Academy, Maputo, is recruiting a Head Chef to lead and guide its culinary development and food production team. The goal is to provide a consistently nutritious, high-quality and pleasant food experience in line with the Academy's values, standards and focus on sustainability.

Key responsibilities

• Develop standard recipes and techniques for food preparation and presentation, exercise portion control and establish controls to minimise food and supply waste.
• Plan and organise the acquisition of good-quality ingredients at an affordable price, maintain stock levels and conduct regular physical inventories.
• Keep kitchen areas clean, safe and hygienic, including a strict handwashing policy, and coordinate preventive maintenance with the Facilities department.
• Train and evaluate kitchen staff, set up training programmes and ensure employees are fully trained on the job.
• Cook or directly supervise skilled dishes, evaluate menu items and update menus regularly in coordination with the school head of administration.
• Analyse material, energy and staff costs and ensure meals are produced on time and in sufficient quantity.
• Attend food committee meetings and ensure meal services follow best practices in employee safety and food safety.

Required profile

• Certification in Food & Beverages Operations, Workplace Safety and Health, and Stores/Purchasing Management.
• At least 5 years of experience in food management or catering management.
• Proven track record of leadership, staff development and team development.
• Honesty, transparency and good time management.
• English proficiency.

Required skills

• Proficiency in Microsoft Office, Word and Excel.
• Food safety and hygiene standards.
